India is a big country with a different kitchen in every region. Cegin Halfnhalf is Kuldeep’s way of cooking through it: classical recipes, lesser-known household dishes and the odd modern take, drawn from where he grew up, trained and travelled.
The name is a wink. In Wales, a “half and half” means chips and rice with your curry. We have always served ours with rice and never chips, so when the pop-up began we kept the name but gave it our own meaning: half Welsh produce, half Indian spices. We stay away from confusion cuisine and keep every dish true to itself.
